Good mood cookies

Oats release their energy slowly and are rich in B6 which raises levels of serotonin making you feel happy! B6 is also thought to help balance hormones and relieve PMS. The pumpkin seeds are full of zinc to boost immunity and help your skin glow.

Sunflower seeds contain essential fats which help to balance your hormones. Brazil nuts and dried apricots are rich in calcium so they are good for your bones and teeth.

Tip: If allergic to nuts simply add another 25g of seeds and lose the brazil nuts!

Makes 18
150g/5oz jumbo porridge oats
50ml/2 fl oz sunflower oil
60g/2oz light muscovado sugar
1 egg, beaten
25g/1oz sunflower seeds
25g/1oz pumpkin seeds
25g/1oz chopped brazil nuts
50g/2oz dried apricots, roughly chopped
  1. Put the oats in a bowl and stir in the sugar and sunflower oil. Cover and set aside for 1 hour.
  2. Preheat the oven to 180 C/350 F/gas mark 4.
  3. Stir the rest of the ingredients into the oat mixture to combine. Place tablespoons of the mixture on a large baking sheet and flatten slightly with a fork.
  4. Bake for 12 to 15 minutes, until golden.
  5. Leave to cool on the baking sheet for about 5 minutes, then lift off with a palette knife and cool on a wire rack.
