This is a great salad for those days between Christmas and New Year when you feel like something a bit lighter and nutritious. It uses ingredients that you’re likely to have around at this time of year but of course feel free to adapt with whatever you have to hand. I used Wobbly Bottom blue goat’s cheese (which you can buy from Carpenter’s Nursery in St Albans) in my salad. Blue cheese is a fab source of beneficial bacteria which is great for our gut health.
Walnuts are an excellent source of brain-healthy nutrients such as omega 3 fatty acids, vitamin E and folic acid. Buy them in their shells at Christmas and have fun cracking them open!
Ingredients
Serves 1
2 handfuls of salad leaves
3 or 4 thin slices of red onion
1 celery stick, sliced
1 clementine, peeled and broken into segments and chopped
about 50g of blue cheese
small handful of walnuts, roughly chopped
drizzle of extra virgin olive oil
drizzle of balsamic vinegar
sea salt and freshly ground black pepper, to taste
- Place the leaves in a medium-sized bowl, and then throw over the onion, celery, clementine, cheese & walnuts.
- Dress with the olive oil and balsamic vinegar. Season to taste and mix well.
