Turmeric, coconut & apricot granola

Spice up your morning!

Most shop-bought granola is ridiculously high in saturated fat and sugar and definitely not a healthy start to the day. If you want to get more of the good stuff into your breakfast it’s simple to make your own and there are endless delicious combinations.

I used the easy Pick n’ Mix granola formula from PACKED to make this warming and gently spicy combination.  The turmeric powder will turn your milk or yogurt a beautiful vibrant yellow – a much more positive outcome than the effects of a certain chocolaty breakfast cereal!

Anti-inflammatory curcumin is the main component of turmeric. If you are prone to aches and pains or suffer with arthritis you could benefit from using this spice on a daily basis.  Research shows that cinnamon can help to curb cravings for sugary foods so it’s great to include at breakfast time.

This granola also makes a healthy snack; pop a handful into a small tub to nibble in the afternoon.

Ingredients
Makes 5 servings
2 tbsp extra virgin coconut oil
2 tbsp maple syrup (agave syrup or honey would also work)
150g/4 oz jumbo oats
2 tsp ground turmeric powder
2 tsp cinnamon
2tbsp coconut flakes
2tbsp cashew nuts
5 dried apricots, chopped
2 tsp flaxseeds
Natural or coconut yogurt, to serve
Small handful of fresh fruit e.g.chopped mango or berries, to serve
  1. Preheat the oven to 15°0C/300°F/gas mark 2.
  2. Put the coconut oil, maple syrup in a pan over a gentle heat. Warm through, stirring, until it melts together.
  3. Add the oats, turmeric and cinnamon. Mix well .
  4. Spread the mixture over a large baking tray and place in the oven. Bake for about 45 minutes until slightly golden and crunchy. Keep an eye on the mix as it can burn easily. Sprinkle the coconut flakes and cashew nuts over the mixture and cook for a further 5 minutes.
  5. Remove from the oven and stir through the apricots and flax seeds. Leave to cool on the tray and then place in an airtight container. Store in a cool, dark place  for up to 2 weeks.
  6. Serve with your choice of milk or yoghurt and small handful of fresh fruit
