Green Curry Salmon Burgers

These burgers are really easy to make and absolutely delicious. Salmon appears once a week on my menu and I’m always looking for new ways to get the children to enjoy it. These burgers went down a storm. I also made an extra burger which I had for lunch with salad today. Salmon is a great source of omega 3 fats which are important for our mental health, keeping our heart fully functioning and our skin glowing! I served my burgers with brown rice, mixed with chopped fresh coriander, lime juice and fresh peas but quinoa would work equally well.

Don’t make the burgers too thick or they will be burnt on the outside before they cook on the inside!

Ingredients

Serves 4
4 skinless salmon fillets, cubed
2 cloves garlic, finely chopped
1-2 tbsp Thai green curry paste
Juice of 1 lime plus extra for serving
Coconut or olive oil for frying

  1. Place the salmon, garlic, curry paste and lime juice in a food processor and process into a smooth mince-like texture.
  2. Remove the mixture and divide into 4. Using your hands form 4 burger patty shapes. Place on a metal baking tray and leave in the fridge for 1 hour or more to firm up.
  3. Heat a little coconut or olive oil in a pan and add the burgers. Cook for 5 minutes on each side.
  4. Serve as desired
