Super Speedy Salmon Supper

Looks great- tastes fantastic!

Easy to throw together, this makes a super healthy dinner as well as a tasty “left-overs” lunch. The salmon provides you with omega 3 fats to support your skin, mood and heart whilst the vegetables provide a range of antioxidant nutrients to give you energy and vitality.

A great packed lunch idea

Lunch idea. Make an extra serving. The next day mix the vegetables and flaked salmon with some cooked couscous, quinoa, brown rice or other grains to make a tasty lunch (Food Doctor Easy Grains are ready-cooked mixed grains and make a great base for this salad). Stir in some pesto for extra flavour.

Ingredients

Serves 4

3 peppers (red, orange or yellow), sliced into strips
2 red onions, cut into wedges
2 courgettes, cut into think slices
1 garlic bulb, halved lengthways
2 medium tomatoes, halved
3 tbsp olive oil
1 punnet of cherry tomatoes on the vine
4 salmon fillets
Lemon juice
Handful of fresh basil leaves
  1. Preheat the oven to 200C/Gas 6. Place the prepared onion, peppers, courgette, garlic and tomatoes in a oven proof baking dish. Drizzle over the olive oil, season with freshly ground black pepper and toss together until the vegetables are coated. Roast for 20 minutes
  2. Add the cherry tomatoes to the dish and place the salmon fillets on top.Season, drizzle over a little more oil and a squeeze of lemon juice. Cook for a further 10-12 minutes until the salmon fillets are just cooked through and the vegetables are tender. Scatter the fresh basil over the top and serve.
