Crunchy Celery Salad

A quick and easy lunchtime salad

I make this salad often as it’s so tasty, quick and easy. Keep the main ingredients in your store cupboard and you’ll always have lunch to hand. Pop it in a tupperware for a great packed lunch. This salad is particularly good if you suffer with premenstrual tension or other hormonal issues. It is packed with a variety of plant oestrogens found in the chickpeas, celery and sesame seeds which help to balance your hormones naturally. Celery can also help with fluid retention and sesame seeds are a good source of calcium.

To make this salad even more filling you could add some cooked prawns, chicken or tofu.

Ingredients

Serves 2

2 sticks of celery sliced
1 jar of marinated artichokes- drained
1 tin of chickpeas- drained and rinsed
1tbsp of sesame seeds
2 tsp of tamari (wheat-free soy sauce)
1 tbsp of extra virgin olive oil
juice of 1 lime (or lemon)

  1. Gently mix together the celery, artichokes and sesame seeds.
  2. Then mix in the tamari, olive oil and lime juice
